Culinary event featuring The Taj's Indian cuisine draws large crowd at Capitol Kitchen

Guam’s epicures converged at Capitol Kitchen on Airport Road in Tamuning during a two-night culinary event that brought authentic Indian cuisine to the spotlight, courtesy of The Taj Palau.


The Taj, a famous dining destination in Palau, partnered with Capitol Kitchen to introduce the restaurant’s popular menu items to Guam and test the waters to see how well the offering would be received.


“Basically, we are seeing a good response to Indian food,” said Robert Scaria, The Taj’s chef and owner. “It's been very successful and we might come back again in three months. We want to do it again.”


Scaria is originally from Kerala in Southern India and is now a long-time Palau resident.


The sold-out event on Feb. 21 and 22 drew approximately 600 diners. “There was a lot on the waiting list, but we couldn't accommodate them anymore,” Scaria said.

 


The elaborate spread is packed with a wide array of palate-satisfying dishes including the restaurant's signature curries, butter chicken, fish and chicken tikka, lamb chops, tandoori prawns, beef karahi, tandoori wings and some vegetarian options.


Outdoor, naan bread was served fresh from the traditional clay oven.


The dishes—spicy and flavorful—were prepared by Scaria's culinary team from Palau.


Located at the Roman Tmetuchl Building in the heart of Koror, The Taj is known not just for its authentic taste but for the “experience of India”—with its décor reflecting traditional Indian culture—and a friendly vibe that keeps patrons coming back.


Established in 2002, The Taj is a recipient of the Travelers’ Choice Award.


Scaria hopes to open a branch on Guam in the future, and add The Taj to the island's international dining landscape.


“Hopefully, we find a place and get immigration clearance for the cooks,” he said.
